WHAT IS MATCHA AND WHAT IS GOOD IN IT?


I loved Matcha Latte even before I was in Japan four years ago. Why? Because I just like it, it's a real health booster - and for me it's THE coffee alternative. So it quickly became clear: I have to make Matcha Latte myself! Matcha is a finely ground special green tea.


It is ground from Matcha leaves that are shaded shortly before harvest to encourage the formation of amino acids. This gives the matcha its bright green color and becomes slightly sweet.


The fine powder also contains catechins (fat burners), vitamins and antioxidants. A matcha shot like this can easily take on a cup of coffee.


MATCHA INSTEAD OF COFFEE?


Sure, coffee is delicious too. Especially with frothed hazelnut milk and a piece of dark chocolate. But: especially not good in stressful times. Matcha wakes you up more gently, because the effect of the contained tea sets in more slowly than the effect of caffeine and lasts longer.


HOW DO YOU RECOGNIZE GOOD QUALITY?


There are now many Matcha suppliers on the market and prices and quality differ considerably - even if you buy organic quality from Japan. The 100 % organic Gold matcha that I'm currently using is really great!


The lush green leaves are carefully picked by hand and gently ground in granite mills. Only intact leaves are processed and separated from the stem.


Inferior quality are mostly processed industrially with the stem and have a grayish to brownish color.


The quality can also be recognized by the taste. While good matcha tastes slightly bitter and has a mildly sweet note, cheaper qualities often taste very bitter.


WHAT CAN YOU DO WITH MATCHA?


One of my fondest memories of Japan are our visits to tea houses. In a tea house the tea room was covered with tatami mats, you sat on the floor and could look into the beautifully landscaped garden with your cup of tea. For me there was a matcha latte with soy milk.


Another time I was in a very modern tea house in the middle of the city and drank “Matcha coffee ” - a very concentrated Matcha tea, so to speak. There was also a typical Japanese sweet, because the matcha shot itself was whipped with a bamboo whisk until it was frothy but not sweetened.


The Japanese are generally totally crazy about matcha and the wildest uses of desserts such as matcha ice cream, flavored cakes and biscuits can be found there. My favorite is definitely Matcha Latte!



MY TIPS FOR MAKING THE PERFECT MATCHA LATTE YOURSELF


Prepare matcha latte with hot water, matcha powder, stir and you're done? Unfortunately, no. You can also speak of a real Matcha Latte recipe.


Because matcha powder is a bit of a diva when it comes to hot drinks and if prepared incorrectly, the fine green tea powder does not dissolve properly and you have bitter lumps in the glass.


Yes! But: with a few tricks you can make your own Matcha Latte yourself at home and it is really delicious :)


# 1 THE RIGHT AMOUNT OF MATCHA


How much matcha you use for a cup of matcha latte is a matter of taste. I usually use 1/2 teaspoon (partly because I often drink several cups). If you like it a bit tart or would like a more intense effect, take 1 teaspoon.


# 2 PROPER WATER TEMPERATURE


Pour about 100 ml of hot, but not boiling water over the matcha powder - 80 ° C is ideal. Then the matcha won't be bitter. Particularly simple as that with a kettle, in which variety temperatures can occur.


I use the Tribest kettle for this, which boils water and heats it to different temperatures (45, 70, 80, 90 degrees). Totally practical.


# 3 STIR, STIR, STIR


Traditionally, a bamboo whisk called a chasen is used to froth matcha. You get wonderfully frothy Matcha, which is really delicious on its own.


If the bamboo whisk is too laborious for you: An electric milk frother will do it too. And: if you like it sweeter, add a little honey, agave syrup or sugar.


If I have to go fast, I use my mixer to froth up. Mix matcha, hot water and some sweetness in the mixer for 35 seconds and prepare the milk in this time.


# 4 FROTH AND ADD MILK


The last step is very simple: add some frothed milk to the whipped matcha. Personally, I love Matcha Latte with foamed almond coconut milk. But cow's milk, soy, almond or rice milk also go well. Warm the milk, whip it until frothy and pour it onto the prepared tea. Voila!

MANUAL

  3. Warm up the almond coconut milk, beat until frothy and pour onto the prepared tea. Voila!
